Ingredients:

  • 2 cans (14 oz each) Hearts of Palm
  • 2 tablespoons Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 1 cup Vegetable Broth
  • 2 tablespoons Fresh Parsley, chopped

Equipment:

  • Box grater or food processor with a grating attachment
  • Large skillet
  • Paper towel

Instructions:

  1. Drain and rinse the hearts of palm to remove any excess brine. Pat them dry with a paper towel.
  2. Using a box grater or a food processor with a grating attachment, grate the hearts of palm to resemble rice grains.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Add the grated hearts of palm to the skillet and season with salt and pepper. Stir well to combine the ingredients.
  5. Pour the vegetable broth into the skillet and bring it to a simmer. Reduce the heat to low and cover the skillet. Let it cook for about 10 minutes, or until the hearts of palm rice is tender and has absorbed the flavors.
