Ingredients:
- 2 cans (14 oz each) Hearts of Palm
- 2 tablespoons Olive Oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 cup Vegetable Broth
- 2 tablespoons Fresh Parsley, chopped
Equipment:
- Box grater or food processor with a grating attachment
- Large skillet
- Paper towel
Instructions:
- Drain and rinse the hearts of palm to remove any excess brine. Pat them dry with a paper towel.
- Using a box grater or a food processor with a grating attachment, grate the hearts of palm to resemble rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
- Add the grated hearts of palm to the skillet and season with salt and pepper. Stir well to combine the ingredients.
